Sweet and Sour Chicken
Ingredients
- Two chicken breasts (2 lbs)
- 1 Cup cornstarch
- Four eggs
- 1 Tablespoon garlic
- 3 Green bell peppers
- 1.5 Cups apple cider vinegar
- 1 Cup sugar
- 1/2 Cup ketchup
- 2 Tablespoons soy sauce
- Scallions
- Everything bagel seasoning or sesame seeds
- Canola / vegetable oil
- Salt / pepper
Equipment
- Large pan or dutch oven
- Baking sheet or pyrex
Instructions
- Fill gallon ziploc with cornstarch, salt, and pepper
- Chop chicken into bite-sized chunks, shake to coat in ziploc bag
- In a large pan or dutch oven heat a few tablespoons of oil, keep just below medium heat
- Dip coated chicken in beaten egg mixture and fry until crispy
- Transfer to baking sheet or pyrex dish, keep warm in an oven at 300 degrees if frying multiple batches
- Whisk liquid mixture (apple cider vinegar, soy sauce, ketchup, and sugar)
- In the same pan once done frying chicken, add minced garlic, cook until fragrant
- Add chopped bell pepper and liquid mixture, bring to boil
- When sauce has thickened (thick, deep amber color) take off heat, probably around 10 minutes to thicken
- Allow sauce to cool for a couple minutes, toss in chicken
- Garnish with chopped scallions and everything bagel seasoning
- Serve with rice and a fresh herbal side salad, such as a spicy cucumber salad

- Store in the refrigerator
Reheat
- Heat in the microwave for a couple minutes
