Sweet and Sour Chicken

Ingredients

  • Two chicken breasts (2 lbs)
  • 1 Cup cornstarch
  • Four eggs
  • 1 Tablespoon garlic
  • 3 Green bell peppers
  • 1.5 Cups apple cider vinegar
  • 1 Cup sugar
  • 1/2 Cup ketchup
  • 2 Tablespoons soy sauce
  • Scallions
  • Everything bagel seasoning or sesame seeds
  • Canola / vegetable oil
  • Salt / pepper

Equipment

  • Large pan or dutch oven
  • Baking sheet or pyrex

Instructions

  1. Fill gallon ziploc with cornstarch, salt, and pepper
  2. Chop chicken into bite-sized chunks, shake to coat in ziploc bag
  3. In a large pan or dutch oven heat a few tablespoons of oil, keep just below medium heat
  4. Dip coated chicken in beaten egg mixture and fry until crispy
  5. Transfer to baking sheet or pyrex dish, keep warm in an oven at 300 degrees if frying multiple batches
  6. Whisk liquid mixture (apple cider vinegar, soy sauce, ketchup, and sugar)
  7. In the same pan once done frying chicken, add minced garlic, cook until fragrant
  8. Add chopped bell pepper and liquid mixture, bring to boil
  9. When sauce has thickened (thick, deep amber color) take off heat, probably around 10 minutes to thicken
  10. Allow sauce to cool for a couple minutes, toss in chicken
  11. Garnish with chopped scallions and everything bagel seasoning
  12. Serve with rice and a fresh herbal side salad, such as a spicy cucumber salad

Storage

  1. Store in the refrigerator

Reheat

  • Heat in the microwave for a couple minutes
