Mormor's Sweet Bread (Vannbakkelse)

Ingredients

  • 1 stick of butter
  • 1 cup of water
  • 1 cup of flour
  • Powdered sugar
  • 4-5 eggs
  • Whole milk (optional)

Equipment

  • Hand mixer
  • Saucepan
  • Baking sheet
  • Oven

Instructions

  1. Heat water in a saucepan
  2. Add butter in chunks
  3. Melt and bring water butter mixture to a boil
  4. Take off heat, add flour while stirring, make sure there are no clumps
  5. Allow mixture to cool until warm (30-60min)
  6. Using a hand mixer, add eggs one at a time until fully incorporated
  7. Pour mixture onto a baking sheet in a rectangular pattern
  8. Bake at 400 degrees for 45min (second rack from the top)
  9. Bake at 350 degrees for 10min, should be golden brown and puffed
  10. Remove and cool to room temperature
  11. Add powdered sugar and water (or heavy whipping cream) to a small bowl and thoroughly mix; 1 part liquid to 10 parts powdered sugar (balance ratio as needed)
  12. Drizzle frosting over the puffed pastry

Storage

  • Store in a container or wrap in foil
  • If frosting used water then can store on the counter, if frosting used heavy whipping cream then store in the refrigerator

Reheat

  1. Do not reheat, serve at room temperature or cold
